第一局部 香草意式奶冻

Part I Vanilla Panna Cotta


所需资料 / INGREDIENTS

  • 鲜奶油 500 g / Whipping cream

  • 幼砂糖 150 g / Fine Sugar

  • 鱼胶片 15 g / Gelatin sheet        

  • 香草条 1 piece / Vanilla stick             


制造流程

第一步. 奶油和糖,香草条一同煮开后参加鱼胶片(冰水浸泡至软),过筛后冷却待用

第二步.香草条要一切二,放进锅里煮,这样香草籽可以充沛和奶油交融一同,发扬香草的芬芳

第三步.鱼胶片必需一片一片放入冰水中浸泡,以防结块无法完全消融入奶油

第四步.意式奶冻料必然要冷却到常温后,才可以倒入磨具中,以防香草籽沉淀从而影响风味


PREPARATION INSTRUCTIONS

Step 1.Add 500g of whipping cream, 150g of sugar and a vanilla stick; stir over a low heat. Soak a gelatin sheet in ice water until soft and add it in.

Step 2.Take one vanilla stick and slice down the middle, scraping out seeds inside. Add both to a pan.

Step 3.Gelatin sheet must be soaked one piece after another to prevent it going lumpy.

Step 4.Stirring continuously, bring to a boil and set aside to cool before pouring into molds.


第二局部 浆果果冻

Part II  Berry Jelly


所需资料 / INGREDIENTS

  • 树莓果茸 250 g / Raspberry puree

  • 草莓果茸 250 g / Strawberry puree

  • 鱼胶片 15 g / Gelatin sheet        

  • 幼砂糖 100 g / Fine Sugar            


制造流程

第一步.将树莓果茸和草莓果茸混合一同,和幼砂糖一同煮开

第二步.鱼胶片放入冰水浸泡至软,浆果混合果茸一同过筛冷却待用

第三步.鱼胶片必需一片一片放入冰水中浸泡,以防结块无法完全消融入奶油


PREPARATION INSTRUCTIONS

Step 1.Add 500g of pureed raspberry and blueberry into a pan with 100g of fine sugar, and bring to a boil.

Step 2.Add another soaked gelatin sheet. Mix the puree and set aside to cool.

Step 3.Gelatin sheet must be soaked one piece after another to prevent it going lumpy.


第三局部  冰皮

Part III  Iced Mooncake Skin


制造流程

第一步.冰皮粉和温水配比 2:1混合搓团后待用

第二步.将冰皮压扁,先后放入蓝莓,树莓,柚子,软后参加浆果奶冻后,包起搓团放入磨具成型


PREPARATION INSTRUCTIONS

Step 1.  For the mooncake pastry, make a 2:1 ratio of roasted glutinous rice flour and water. Knead until combined.

Step 2.  Remove frozen jelly and panna cotta filling from mold, and press inside a round piece of dough until completely encased. Stuff into the mooncake mold; press and remove.
